Description |
1 small cowhorn sausage stuffer. This one was used for pork. The stuffer is hollow on the inside. The horn has one wider end and one narrower end. The narrow end has a sort of ring indentation going around it, most likely from when the casing was secured around it. The rest of the horn is smooth with some indentations due to the inherent nature of the material. |

This sausage stuffer was used for pork. From donor's documentation: "Two cowhorn sausage stuffers, the larger one for beef, the smaller for pork. My job during the sausage-making process was to sit with a large common pin to poke small holes where air had been trapped inside the casing. I felt very privileged to have such an important job." Nora visited with 3 different women who also grew up in Tyler (all three older than Nora). All of them remembered using the cowhorn sausage stuffers but none could remember what happened to the horns over the years. |
